Paneer Stuffed Spinach Parathas

This is one of the popular weekend breakfast items at our home. My son is fascinated by the different colors and loves to eat it. Also mentioning that it contains paneer does not hurt at all.


We are all paneer lovers at our home. Do try this paratha, it is very delicious. Crispy and flaky on the outside and soft from the paneer on the inside. The scotch bonnet peppers not only add color but some heat to the parathas. Nutritious, delicious and easy to make, is how I will describe this popular breakfast item. You can substitute the spinach with some fenugreek leaves or even collard greens if you fancy.


You might have some excess atta on hand after making the 12 parathas. Just roll out the excess balls like you would for plain rotis and these can be had as a snack later on or even for lunch.

Spinach Quesadilla - with an Indian twist

My son is a picky eater and in my quest to feed him healthy foods I am always at a loss as to what to make to tempt his taste buds that is both nutritious and tasty.

My sweet sis-in-law Shilpa gave me this recipe, she uses a different filling but the same concept. This recipe has been a winner in our family and both my son and my niece loves it. Not to mention that the adults love it too, and what's not to love the whole wheat rotis give them fibre, the spinach gives iron and the cheese gives protein and fat ( you can use low fat cheese too). You can also put some black beans in it about 1/4 cup cooked black beans or red kidney beans (rajmah), but I did not have any on hand today.

If you want to make the rotis please do follow the steps in my Aloo Paratha recipe, but omit the step for the filling. Just roll out the plain dough into an 8-10 inch diameter circle and lightly toast both sides.

Sai Bhaji

When we lived in Ghana we had quite a number of Sindhi friends and they would cook these yummy delicious Sindhi food. One of the Sindhi dishes that really made an impression on us was Sai Bhaji.

Sai Bhaji became part of our menu whenever we had some spinach on hand. Sai mean green and the Bhaji means vegetable, so this green vegetable is not only tasty but healthy and wholesome too.

I have adapted my mom's recipe to the ingredients available here . Generally along with spinach a couple of other sour tasting green leaves are used, as those were not available to me I substituted with tamarind concentrate and some kasturi methi  ( dried fenugreek leaves).

The Sai Bhaji tasted great, just like I remembered it and everybody loved it at home. I served it with some hot steaming rice. You can also have it with warm rotis. So if you have some spinach at hand and want to try something new with it, try Sai Bhaji, you will not regret it.
