I make a little at a time and store it in a clean glass container in my fridge. You can also make it in large quantities but make sure to use it up soon as the shelf life of this is less compared to the store brands. I also use a fruit-juice-sweetened-no-sugar-added jam and whole wheat bread to make these sandwiches. Maybe next time I will try to make my own jam and whole wheat loaf too !!
If you use salted peanuts, do not add any additional salt. You can also use honey roasted peanuts, in that case skip the honey. Some recipes called for some peanut oil to be added , however I skipped that as peanuts do have peanut oil in them.
Makes about 3/4 cup of Peanut Butter
Ingredients
1 cup unsalted, dry roasted peanuts
1/2 tbsp honey
2 pinches of salt
1 tbsp peanut oil
1/4 cup unsalted roasted peanuts, coarsely chopped ( optional, use this only if you want to make Chunky Peanut Butter )
Method
- Place all the above ingredients ( except the 1/4 cup coarsely chopped peanuts ) in your food processor or a blender and turn it on. Note : do not use a coffee grinder as it will jam up the motor and burn it out ....yes I did that !
- The peanuts will turn to powder first and then the oils will start releasing and the powder turns to paste. The whole mixture will start gleaming with the released oils. Once that happens turn it off, scrape it down once and turn it on again. Blend for a couple of seconds and remove. Store in an air tight container in your fridge.
